The sharpening units on both sides give way under the pressure of the knife to be sharpened, which means that there is never enough force to cause a hazard. Typical pull-through knife sharpeners have the problem that the grinding angle is not constant. This leads to differently sharpened blades. In addition, the blade can be destroyed by possible tilting.
This cannot happen with our knife sharpeners. Thanks to the guide rail, you can sharpen your knives at a constant angle. This not only protects the knife blades - sharpening is also much easier.
Knives are different and serve different purposes. An outdoor or pocket knife needs to be treated differently to a Japanese knife or a paring knife. They need to be sharpened at different angles so that they can fully fulfil their purpose.
This is exactly why our knife sharpeners (with the exception of the V-Sharp Curve) offer 4 different grinding angles. With the Multi Edge, any angle from 10° to 90° is possible.
In addition to the correct grinding angle, the grit of the grinding unit used is also important for the perfect sharpness of knife blades.
A coarse grinding unit is usually sufficient for simple knives. For high-quality knives made from special steels, we also offer grinding units with grit sizes of 600 and 1000. This allows an even finer sharpness to be achieved.
The V-Sharp A4, A4 Elite and V-Sharp Xtreme Edge models are supplied with 325 grit grinding units. A 600 grit sanding plate is included with the Multi Edge.
Not all knives have a straight edge. We have developed ceramic grinding units for our V-Sharp A4 and A4 Elite models for serrated knives such as bread knives or serrated and other unusual knives. These are specially optimised for this application
While our standard sharpening units are relatively wide in order to be effective, the ceramic grinding units are very narrow. As a result, they adapt perfectly to the shape of the blade - the serrated edge is retained and the blade retains its perfect sharpness.
Changing the grinding units is quick and easy.
Simply hook the blade of the knife to be processed at the top between the frame and the grinding units and release it from the anchoring with a short twisting movement. Insert the new sharpening unit at the desired angle - done!
